Apple pie on a chocolate brownie crust - gluten free and vegan


I had so much fun creating and making food for last weekend plant based picnic

These apple pie is for sure the best dessert I’ve ever made. 

Apple pie is favourite cake, but this one is different. Vegan and gluten free but as delicious as my Mum's.

I am so exited that so many people complimented my apple pie, and my Mr M requested me to make another one this weekend.








Ingredients
Apple pie on a chocolate brownie crust - gluten free and vegan



For the brownie crust:

1 cup walnuts 
1 1/2 cup dates
1 tbs coconut oil  ( this is optional)
1 1/2 tbs raw cacao powder Big Tree Farms
1/4 tsp vanilla powder
1 tsp maca powder -  oragnic burst
1/2 cup of almond flour
pinch of salt
1 tsp of coconut sugar

Bezglutenowy brownie spod ciasta:

1 szklanka orzechow wloskich
1 1/2 szklanki daktyli
1 lyzka oleju kokosowego 
1 1/2 lyzki kakao
1/4 lyzeczki wanili
1/2 szklanki zmielonycj na mialko orzechow laskowych
szczypta soli
1 lyzka cukru kokosowego


For filling:



5 apples sliced or chopped

1/2 lemon, juice
100gr apple &mango  pure with spices ( pinch of cardamom, pinch of cinnamon, pinch of vanilla, pinch of coves, or you can add already mixed spices)
5 dates

Na nadzienie do ciasta:

5 obranych i pokrojonych jablek
1/2 sok z polowy cytryny
100gr mango&jabkowego pure z przyprawami jak cynamon, kardamon, wanilia,gozdziki
5 daktyli


For the crumble:

1/2 cup gluten free oats Bob's Red Mill
1tsp maca powder organic burs
1/2 cup gluten free flour Bob's Red Mill
1 tbsp coconut oil
mixed spices ( pinch of cardamom, pinch of cinnamon, pinch of vanilla, pinch of coves, or you can add already mixed spices)
(combine all together and bake 10-15min)


Na kruszonke:
1/2 szklanki bezglutenowych platkow owsianych
1 lyzka proszku maca (moja ulubiona firma jest organic burst)
1/2 szklanki maki bezglutenowej 
mix przypraw jak cynamon, kardamon, wanilia,gozdziki
( wymieszaj wszystko razem i piecz ok 10-15min)


METHOD

  1. Place 1 cup walnuts and 1 cup almond flour in food processor and process until finely ground.  Zmieszaj orzechy laskowe i zmielone orzechy laskowe w robotic kuchennym, ucieraj az do moment az wszytsko jest uatrte na mial.
  2. Add the raw cocoa powder or cacao, vanilla powder and himalayan salt, maca powder and coconut oil. Pulse to combine . Dodaj kakao, wangle, sol, mace i olej kokosowy. Ucieraj az wszystko sie polaczy.
  3. Add the dates to the food processor and process until small bits remain.  Dodaj daktyle, i mieszaj wszystko az sie mikstura policy.
  4. Add nut and cocoa mixture back into food processor and while processing, drop small handfuls of the date pieces down into the food processor spout. Process until a dough consistency is achieved, adding more dates if the mixture does not hold together when squeezed in your hand.  Dodaj cala miksture do robota kuchennego i ucieraj , dodaj dactyle. Mieszaj az wszystko bedzie przypominoc mike na ciasto. Dodaj wiecej dactyli jesli sie wszystko nie skleja za dobrze, zmiksuj az do wygladu jak ponizej.

5.     Add the crust mixture to a small cake pan. Toss to combine and evenly distribute, and then press down with you hands until it is flat and firm even on the wall of your cake pan. Cala mixture na spod ciasta wyloz w foremce do pieczenia, naciskajac mocno zeby wszystko ze soba sie skleilo.
6.Place in freezer or fridge to chill before adding filling. Przenies mixture w foremce do pieczenia do lodowki, zeby sie schlodzilo zanim dodamy nadzienie ciasta.
7. To make filling,peel and core the apples, slice or chop all apples and sprinkle with lemon juice. Set it aside.  Aby zrobic nadzienie ciasta, obierz i wydraz pestki z jablek, wloz do robot kuchennego na opcje siekanie badz zetrzyj na tarce recznej. Jak juz masz przygotowane jablka skropl je sokiem z cytrymy i odstaw na bok na chwile.
8. Using the food processor make the pure by processing the dates mango and apple.When it’s relatively smooth add spices and set it aside. Uzyj robot kuchennego badz blender do zrobienia pure z jablek i mango.
9.  Take the crust from fridge and start layering it with apples and the pure. Wyloz blaszke ze spodem jablkami.
10.  Make as many layers as you desire and when finished if you want put the crumble on the top. Let it sit in the fridge for a few hours to help it become more firm and enjoy!
