I made these yummy and crunchy cookies for last Sunday Plant Based Picnic, never baked cookies before, so I am so pleased with the final 

They are gluten free, vegan and totally easy to make.

I hope that you will enjoy them as much as me and my Mr M.


Ingredients


2 flax eggs  ( 6 tbs flax milled and 9tbs filtered water)
1 cup gluten free flour Bob's Red Mill
2 tbs Raw Chocolate supersedes -Punch
1 tsp Organic Burst maca powder
1/2 cup coconut sugar ( honey or agave, your choice)
1/2 cup buckwheat flour ( you can add more of full purpose gluten free flour)
1  tsp gluten free baking powder
1/2 tsp gluten free soda
1/2 tsp raw cacao nibs The Raw Chocolate Co
3 tbs raw cacao powder - big tree farms
1/2 cup shredded coconut



Method

1.Preheat the oven to 170C fan/gas 5. Line baking tray with non-stick baking paper.
2. Put all the ingredients in a  bowl and mix until the dough appears completely combined.
3. Cover with a tea towel and keep in warm place for 10 minutes.
4. Roll into balls, place about 5cm apart on the tray, and flatten slightly with your fingers.
5. Bake for 12-15min.
