Adas Polo - Persian Rice With Lentils, lentils, rice, vegan, vegetarian

Another delicious and healthy Iranian dish made with aromatic rice, lentils, caramelised onion, raisins and spices. You can enjoy it with meet or veggie curry or just plain. 
Of course my recipe has little twist to the original given to me by my friend.


This dish is definitely a winner who n it comes to winter comfort food! Not only is it delicious, but is also very easy to make. Of course for all busy bees like me, you can make one big batch to last you for 2-3 days and serve it with curry or grilled meet.


Ingredients:

1 cup of puy lentils ( you can use green lentils)
1/2 cup of rice ( you can add more if you want)
water to cook your rice and lentils
himalayan salt ( or sea salt)
1/2 tsp saffron (if you don't have it is also ok)
mixed spices ( cumin, turmeric, cardamon, cinnamon)
pinch of black pepper 
1-2 onions diced and caramelised
2 tbsp coconut oil ( to fry onions)
1 handful of roasted pecans
1 tbsp chilli olive oil






Method:


1. Cook lentils in salted water for 20-30 min, drain water from lentils and set aside.
2. Fry the onions, until golden.
3.  Once rice is done, transfer cooked rice to a large bowl, add lentils caramelised onions and spices, raisins, pecans, chill oil.
4. Toss everything, serve warm or cold.
